When I was a teenager, I worked in New Orleans for a chef named Paul Prudhomme. That was a very important time in my life as a chef. I developed my palate and learned a lot. And here I am now. I specialize in modern Mexican and contemporary Latin cuisines.

It's reassuring to realize that everybody is as stupid as you are and that all we are doing when we are standing in the kitchen wondering what we came in here for is "woking.

A discipline I have observed is an attitude of love and reverence to people.

I think I was more or less, convinced of that by just the press, the US press. By people who were pressuring you, saying that you gotta beat the Russian&#39;s, if you don&#39;t win anything else, win the Russian meet and so forth.
